Jumeirah Bali invites guests to immerse themselves in a taste of Italy with Al Fresco Italian Night at its signature Segaran Dining Terrace. Held weekly, this vibrant open-air experience combines the warmth of Italian hospitality with a relaxed, lively setting, promising an evening that’s as authentic as it is atmospheric.
This culinary journey is helmed by Chef Alessio Nallino, the executive chef at Jumeirah Bali, whose vision shapes each of the resort’s culinary offerings, from Akasa Restaurant & Bar to Maja Sunset Lounge. Hailing from Italy, Chef Ale’s expertise spans across Switzerland, Australia, Vietnam, and includes a notable tenure at a Michelin-starred restaurant in Macau. His dishes at Segaran bring a thoughtful blend of MideterrAsian flavours, delicately adapted to the local palette and inspired by Bali’s natural abundance.
In his commitment to authenticity and quality, Chef Alessio partners with local Balinese farmers and artisans to source fresh ingredients, emphasizing a farm-to-table approach that highlights seasonal produce and ethically farmed seafood. By working closely with these local producers, he not only supports the community but also ensures that each dish is infused with the freshest, most vibrant flavours Bali has to offer. This sustainable sourcing reflects his dedication to preserving the environment and enhancing the culinary experience, allowing diners to savour the true essence of both Italian and Balinese cuisines.
Chef Alessio’s culinary philosophy is encapsulated in his favourite quote: “Never trust a skinny Italian chef.” This playful adage serves as a tribute to the renowned three-Michelin-star restaurant Osteria Francescana and its celebrated chef, Massimo Bottura, whose twenty-five-year career has inspired many in the culinary world. For Chef Alessio, it is a reminder that passion and authenticity are essential ingredients in creating memorable dining experiences.
On Tuesday evening, Among the Road’s writer had the privilege of sitting down with Chef Alessio to savour a thoughtfully crafted seven-course tasting menu. Each course showcased Chef Ale’s signature approach: a deep respect for Italian tradition, delicately infused with Balinese ingredients and inspiration.
The journey began with the Burrata Tart, a layered mosaic of grilled eggplants, zucchini, and caramelized onions, offset by a vibrant coulis of roasted tomatoes and bell peppers. Next, Mahi-Mahi arrived, a refreshing house-cured fillet with the clean, crisp notes of Plaga farm cucumber, pickled shallots, and sour cream.
The third course, Linguine al Ragu d’Anatra, presented a comforting homemade linguine, enveloped in a rich white duck ragout and finished with duck jus, bringing a depth that was earthy yet refined. A seared Bonito loin followed, complemented by fennel purée, bright notes of orange, and a salmoriglio of olives, capers, and pomegranate, capturing both Mediterranean flair and local freshness.
The tasting then transitioned to Agnello, a succulent grilled lamb chop paired with crispy polenta and braised bell peppers, rounded off by a mustard jus that added a touch of warmth. For a refreshing pause, a Lemon & Basil Sorbet was served, with citrus and a delicate berry veil to cleanse the palate. To close, the quintessential Italian Tiramisu arrived, with layers of savoiardi biscuit, coffee, and mascarpone foam, all delicately accented by amaretto jelly—a fitting, indulgent finale to an unforgettable evening.
In true homage to its setting, Segaran’s design reflects elements of Bali’s Majapahit heritage. Handcrafted tiles from Yogyakarta echo the earth’s warmth, while Italian ceramic tableware, with its rich blue hues, mirrors the lush forests and rolling hills nearby. Paired with sweeping views of the ocean, this setting offers a seamless harmony between culinary heritage and Bali’s own natural beauty.
Al Fresco Italian Night is held every Tuesday and Saturday from 5:30 p.m. to 11 p.m. Alongside fine dining options ranging from à la carte to five- and seven-course meals, guests can enjoy cocktails and an exceptional selection of Italian wines, thoughtfully curated to enhance the flavours of Chef Ale’s authentic pastas and dishes.
